Strawberry Energy Bites

Instructions
- Preheat the oven to 250 degrees.
- Place the strawberries in a single layer on a parchment-lined baking sheet and bake for 60 to 90 minutes until they reduce to about ⅓ cup of dehydrated strawberries.
- In a food processor, process the almonds until broken into small pieces.
- Add the dates, chocolate chips, dehydrated strawberries, and 2 tablespoons of shredded coconut to the food processor and process until smooth. Add water if necessary to help the mixture come together.
- Form the mixture into 12 balls and roll each in the remaining shredded coconut.
- Store the energy bites in the refrigerator until ready to serve, or freeze for up to 3 months.
