Ingredients

The base

  • 1 cup almonds
  • 4 oz Medjool dates

Flavorings

  • 2 tbs mini vegan chocolate chips
  • cups frozen strawberries
  • ¼ cup shredded unsweetened coconut

Instructions

  1. Preheat the oven to 250 degrees.
  2. Place the strawberries in a single layer on a parchment-lined baking sheet and bake for 60 to 90 minutes until they reduce to about ⅓ cup of dehydrated strawberries.
  3. In a food processor, process the almonds until broken into small pieces.
  4. Add the dates, chocolate chips, dehydrated strawberries, and 2 tablespoons of shredded coconut to the food processor and process until smooth. Add water if necessary to help the mixture come together.
  5. Form the mixture into 12 balls and roll each in the remaining shredded coconut.
  6. Store the energy bites in the refrigerator until ready to serve, or freeze for up to 3 months.
