Lemon Coconut No-Bake Bites

Ingredients

  • 8 pieces soft Medjool dates, pitted
  • ½ cup unsweetened applesauce
  • 1 large lemon (zest and juice)
  • ½ teaspoon vanilla extract
  • ½ cup coconut flour
  • 1 scoop (30g) vanilla plant protein powder
  • a pinch salt
  • 2-4 tablespoons almond milk (if needed)

Instructions

  1. Process the dates, applesauce, lemon juice, lemon zest, and vanilla in a food processor until well combined.
  2. Add coconut flour, protein powder, and salt, and process until a smooth dough forms.
  3. If the mixture is too dry, add almond milk; if too wet, add more coconut flour.
  4. Roll the mixture into 12-16 balls and optionally roll in shredded coconut.
  5. Store the bites in an airtight container in the refrigerator.
