Ingredients

For the protein powder version

  • 9 pieces Medjool dates, pitted
  • ½ cup unsweetened applesauce
  • ¼ cup almond milk
  • ¼ tsp peppermint extract
  • ½ cup coconut flour
  • 2 tbsp cacao powder
  • 1 scoop (30g) vanilla brown rice protein powder
  • 2 tbsp cacao nibs or chocolate chips (optional)

For the non-protein powder (paleo) version

  • 10 pieces Medjool dates, pitted
  • ½ cup unsweetened applesauce
  • ¼ cup almond milk
  • ¼ tsp peppermint extract
  • ½ cup + 2 tbsp coconut flour
  • 2 tbsp cacao powder
  • 2 tbsp cacao nibs or chocolate chips (optional)

Instructions

  1. Blend dates, applesauce, almond milk, vanilla, and peppermint in a food processor until pureed.
  2. Add coconut flour, brown rice protein (if using), and cacao powder, then blend until a dough forms.
  3. Adjust consistency with more coconut flour or almond milk as needed.
  4. Stir in cacao nibs and roll the mixture into about 15 bites.
  5. Store in the refrigerator or freezer.
