No-Bake Vanilla Cake Bites

Ingredients

  • cups packed pitted medjool dates
  • cups raw walnuts
  • 1 cup almond flour
  • cup coconut flour
  • pinch sea salt
  • 2 tsp vanilla extract
  • to taste finely shredded unsweetened coconut (optional)

Instructions

  1. Blend the pitted dates in a food processor until small bits remain or a ball forms, then set aside.
  2. In the food processor, combine walnuts, almond flour, coconut flour, and sea salt, and blend until a semi-fine meal is achieved.
  3. Add the dates back into the mixture along with the vanilla extract and pulse until a loose dough forms.
  4. Scoop out 2-tablespoon amounts and roll into balls or leave as is on a parchment-lined baking sheet.
  5. Optionally, roll in shredded coconut before storing in the refrigerator or freezer.
