Ingredients

The cake bites

  • 1 cup packed pitted medjool dates
  • 1 cup almond flour
  • cup coconut flour
  • ¼ cup cacao powder
  • 2 tsp vanilla extract
  • 4 Tbsp maple syrup
  • 1 Tbsp coconut cream

The glaze (optional)

  • 3 Tbsp coconut butter
  • 2 Tbsp melted coconut oil
  • 1 Tbsp cacao powder
  • 1 Tbsp maple syrup

Instructions

  1. Line a baking sheet with parchment paper.
  2. Blend the pitted dates in a food processor until a ball forms.
  3. Add almond flour, coconut flour, and cacao powder to the food processor and blend until a fine meal is achieved.
  4. Mix the dates back in with vanilla extract, maple syrup, and coconut cream until a tacky dough forms.
  5. Scoop out 1 ½ Tbsp of dough and roll into balls, placing them on the baking sheet.
  6. Freeze the balls for 10 minutes.
  7. Prepare the glaze by mixing all glaze ingredients in a bowl until combined.
  8. Dip each cake bite into the glaze and place back on the parchment paper to dry.
  9. Return the glazed bites to the freezer to set for another 10 minutes.
  10. Enjoy or store leftovers in the refrigerator or freezer.
