Ingredients

The base

  • 1 cup coconut or almond flour
  • cup ground gluten free cereal (berry flavored or freeze dried strawberries)
  • ¼ cup crushed freeze dried berries (raspberry and/or blueberry)

The mix-ins

  • ⅓ – ½ cup chocolate nut butter
  • ¼ cup chocolate chips
  • 2 – 3 tablespoon cocoa powder
  • ½ tsp raspberry extract
  • ½ tsp butter or vanilla extract (optional)
  • ½ or more cup honey or maple syrup

Instructions

  1. Grind up the cereal if using.
  2. Mix the dry ingredients together and add nut butter, extract, crushed berries, and honey.
  3. Combine well and roll the mixture into balls.
  4. Freeze the balls immediately and optionally coat with cocoa powder after freezing.
  5. Store in the fridge or freezer to maintain freshness.
