Instructions
- Soak the cashews in purified water for 2-4 hours.
- Blend the soaked cashews with water, vanilla, and sweetener until creamy.
- Blend the freeze-dried strawberries until fine and set aside some for rolling.
- Blend the granola until it resembles flour.
- In a bowl, mix granola, strawberries, and cashew cream, then add coconut flour and maple syrup.
- Adjust the mixture's consistency by adding more granola or coconut flour if needed.
- Roll the mixture into balls and optionally fill them with jam.
- Chill the bites in the freezer for 30 minutes.
- Sprinkle with powdered sugar before serving.
