Ingredients

The cake batter

  • 1 cup blanched fine almond flour
  • ¼ cup unsweetened cocoa powder
  • 3 Tablespoons coconut flour
  • 2 Tablespoons coconut sugar
  • 1 teaspoon pure vanilla extract
  • pinch sea salt
  • ⅓–½ cup creamy no stir almond butter
  • cup maple syrup
  • 2–4 Tablespoons Amaretto
  • ¼ to ½ teaspoon almond extract (optional)

The chocolate coating

  • ¾ cup dark chocolate chips
  • 1 Tablespoon coconut oil

Optional toppings or add-ins

  • to taste orange extract
  • to taste melted butterscotch chips
  • to taste orange zest
  • to taste powdered sugar or coconut sugar

Instructions

  1. Sift together almond flour and coconut flour, then combine with cocoa powder and coconut sugar in a bowl.
  2. Add almond butter and mix the ingredients well.
  3. Gradually add maple syrup while mixing to form a dough, then stir in amaretto, almond extract, vanilla, and sea salt.
  4. If the batter is too runny, add more almond flour; if too dry, add more maple syrup or almond butter.
  5. Roll the mixture into 1-1.5 inch balls and place them on a tray lined with parchment paper.
  6. Melt dark chocolate chips and coconut oil in the microwave in 30-second intervals, stirring in between.
  7. Drizzle or coat the cake bites in the melted chocolate.
  8. Sprinkle with powdered sugar or coconut sugar if desired.
  9. Freeze for 20-30 minutes, then transfer to a sealed container for storage.
