Ingredients

The bites

  • 2 cups Almond Flour
  • 4 tablespoons Coconut Flour
  • ¼ cup Macadamia Nuts, chopped
  • 1 whole Lemon, juiced
  • 1 teaspoon Vanilla Extract
  • 1 pinch Sea Salt
  • 1 scoop Collagen Peptides (optional)
  • ¼ cup Maple Syrup
  • 4 tablespoons Coconut Oil, melted

The icing

  • 1 cup Powdered Sugar
  • 1 tablespoon Water
  • 1 tablespoon Lemon Juice

Instructions

  1. 1. Prepare the wet ingredients by whisking melted coconut oil, maple syrup, vanilla extract, and lemon juice in a small bowl.
  2. 2. In a separate bowl, combine the dry ingredients: almond flour, coconut flour, chopped macadamia nuts, sea salt, and collagen peptides if using.
  3. 3. Mix the wet ingredients into the dry ingredients until fully combined.
  4. 4. Scoop the dough into 12 even-sized balls and place them on a parchment-lined baking sheet.
  5. 5. For the icing, whisk together powdered sugar, water, and lemon juice in a small bowl.
  6. 6. Spoon icing on top of each lemon bite.
  7. 7. Refrigerate for 20-30 minutes to set, then enjoy. Store leftovers in the fridge for up to a week.
