Instructions
- 1. Prepare the wet ingredients by whisking melted coconut oil, maple syrup, vanilla extract, and lemon juice in a small bowl.
- 2. In a separate bowl, combine the dry ingredients: almond flour, coconut flour, chopped macadamia nuts, sea salt, and collagen peptides if using.
- 3. Mix the wet ingredients into the dry ingredients until fully combined.
- 4. Scoop the dough into 12 even-sized balls and place them on a parchment-lined baking sheet.
- 5. For the icing, whisk together powdered sugar, water, and lemon juice in a small bowl.
- 6. Spoon icing on top of each lemon bite.
- 7. Refrigerate for 20-30 minutes to set, then enjoy. Store leftovers in the fridge for up to a week.
