Ingredients

Cookies

  • cup almond flour
  • ¼ cup coconut flour
  • 1 tsp baking soda
  • tsp salt
  • cup melted coconut oil
  • cup maple syrup
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla

Glaze

  • 1 cup powdered sugar
  • 2 tbsp lemon juice
  • 2 tbsp lemon zest

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix almond flour, coconut flour, baking soda, and salt.
  3. In a small bowl, whisk together coconut oil, maple syrup, lemon juice, lemon zest, and vanilla.
  4. Add the wet ingredients to the dry ingredients and stir until combined.
  5. Chill the mixture in the refrigerator for 30 minutes.
  6. Roll the dough into balls and flatten slightly on the baking sheet.
  7. Bake for 14-16 minutes or until golden brown.
  8. Prepare the glaze by combining all glaze ingredients.
  9. Once cookies are cooled, top them with the glaze and enjoy!
