Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix almond flour, coconut flour, baking soda, and salt.
- In a small bowl, whisk together coconut oil, maple syrup, lemon juice, lemon zest, and vanilla.
- Add the wet ingredients to the dry ingredients and stir until combined.
- Chill the mixture in the refrigerator for 30 minutes.
- Roll the dough into balls and flatten slightly on the baking sheet.
- Bake for 14-16 minutes or until golden brown.
- Prepare the glaze by combining all glaze ingredients.
- Once cookies are cooled, top them with the glaze and enjoy!
