Instructions
- Preheat the oven to 350°F.
- Cream the butter and sweetener in a mixing bowl for about 2 minutes.
- Add the egg, lemon zest, and lemon juice, then mix until light and fluffy.
- Gradually add half of the almond flour and mix, then add the remaining almond flour, salt, and baking soda, and mix again.
- Line a baking sheet with a silicone mat.
- Form balls with the dough, flattening them slightly.
- Bake for 8-12 minutes until golden brown at the edges.
- Let the cookies cool on the baking mat for 5 minutes before transferring to a cooling rack.
