Ingredients

  • 6 tablespoons unsalted butter

  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons lemon zest
  • cups blanched almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F.
  2. Cream the butter and sweetener in a mixing bowl for about 2 minutes.
  3. Add the egg, lemon zest, and lemon juice, then mix until light and fluffy.
  4. Gradually add half of the almond flour and mix, then add the remaining almond flour, salt, and baking soda, and mix again.
  5. Line a baking sheet with a silicone mat.
  6. Form balls with the dough, flattening them slightly.
  7. Bake for 8-12 minutes until golden brown at the edges.
  8. Let the cookies cool on the baking mat for 5 minutes before transferring to a cooling rack.
