The coating

Instructions
- Preheat the oven to 180C/350F and line a baking sheet with parchment paper.
- In a large bowl, mix the dry ingredients together.
- In another bowl, beat the egg whites until soft peaks form, then add lemon extract and food coloring.
- Gently fold the egg mixture into the dry ingredients until combined.
- In a separate bowl, place the powdered sugar.
- Scoop tablespoon-sized portions of dough and roll them in the powdered sugar.
- Place the cookie dough balls on the baking sheet and bake for 15 minutes or until the edges are done and tops crackle.
- Let the cookies cool on the baking sheet briefly before transferring them to a wire rack to cool completely.
