No Bake Lemon Pistachio Cookie Bites

Instructions
- Grind the pistachios in a food processor until mealy, not flour.
- Grate the lemon to obtain zest.
- In a large bowl, combine the dry ingredients: coconut flour and ground pistachios.
- If desired, add coconut sugar for a denser texture.
- Mix in the almond butter, lemon zest, honey or maple syrup, and extracts.
- Adjust the mixture with more honey or almond butter as needed.
- Mix well and roll the mixture into bite-sized balls.
- Place the balls in the freezer to harden.
- Once hardened, optionally coat with extra lemon zest and coconut sugar or vanilla protein.
