Instructions
- Process the almonds in a food processor until they become a fine almond meal.
- Add the remaining ingredients to the food processor and blend until well combined.
- Scoop a heaping tablespoon of the mixture and roll it into a ball, optionally rolling it in shredded coconut.
- Place the balls on a baking sheet and repeat until all the mixture is used.
- Freeze the baking sheet for 10-15 minutes, then transfer the balls to a freezer-safe bag for storage.
