Ingredients

  • 1 cup raw almonds
  • 15 pieces Medjool dates, pitted
  • ½ cup unsweetened cocoa powder
  • cup unsweetened shredded coconut
  • 1 teaspoon vanilla
  • ¼ cup mini chocolate chips

Instructions

  1. Process the almonds in a food processor until they become a fine almond meal.
  2. Add the remaining ingredients to the food processor and blend until well combined.
  3. Scoop a heaping tablespoon of the mixture and roll it into a ball, optionally rolling it in shredded coconut.
  4. Place the balls on a baking sheet and repeat until all the mixture is used.
  5. Freeze the baking sheet for 10-15 minutes, then transfer the balls to a freezer-safe bag for storage.
