Homemade Energy Bites

Ingredients

  • ½ cup pitted Medjool dates, packed
  • ½ cup ground flaxseed
  • ¾ cup oats
  • ½ cup coconut flakes
  • ¼ cup cocoa powder
  • ½ tsp cinnamon
  • ¼ tsp cardamom
  • ¼ tsp nutmeg
  • ½ cup tahini
  • ½ cup dark chocolate chips (optional)

Instructions

  1. Line a casserole dish with parchment paper.
  2. Soak the dates in water for at least 30 minutes or overnight in the refrigerator.
  3. In a food processor, combine ground flaxseed, oats, coconut flakes, cocoa powder, cinnamon, cardamom, and nutmeg, and pulse until broken into small pieces.
  4. Transfer the dry mixture to a separate bowl and set aside.
  5. Drain the dates and add them to the food processor with tahini, blending until a paste forms.
  6. Add the dry mixture back into the food processor with the date paste and blend until fully incorporated.
  7. If using, add chocolate chips and pulse a few times to mix.
  8. Transfer the mixture into the lined dish and press firmly and evenly.
  9. Refrigerate for 30 minutes, then cut into 36 bites.
  10. Store the bites in the refrigerator or freezer.
