Homemade Energy Bites

Instructions
- Line a casserole dish with parchment paper.
- Soak the dates in water for at least 30 minutes or overnight in the refrigerator.
- In a food processor, combine ground flaxseed, oats, coconut flakes, cocoa powder, cinnamon, cardamom, and nutmeg, and pulse until broken into small pieces.
- Transfer the dry mixture to a separate bowl and set aside.
- Drain the dates and add them to the food processor with tahini, blending until a paste forms.
- Add the dry mixture back into the food processor with the date paste and blend until fully incorporated.
- If using, add chocolate chips and pulse a few times to mix.
- Transfer the mixture into the lined dish and press firmly and evenly.
- Refrigerate for 30 minutes, then cut into 36 bites.
- Store the bites in the refrigerator or freezer.
