Instructions
- Preheat the oven to 350°F and prepare an 8x8 baking pan.
- Make the streusel topping by mixing flour and brown sugar, then adding peanut butter and melted butter until crumbly.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt. In a stand mixer, beat creamy peanut butter and butter until smooth, then add brown sugar, egg, and vanilla.
- Alternate adding the dry ingredients and buttermilk to the peanut butter mixture until just combined.
- Spread the batter in the pan, spoon jelly over it, swirl gently, and sprinkle the streusel on top.
- Bake for 30 minutes until golden brown and a toothpick comes out clean. Cool on a wire rack before slicing.
