Ingredients

The cake

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup creamy peanut butter
  • 2 tablespoons unsalted butter
  • ½ cup light brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ cup buttermilk
  • ½ cup grape jelly or jelly of your choice

The peanut butter streusel topping

  • ½ cup all-purpose flour
  • ½ cup light brown sugar
  • ¼ cup crunchy peanut butter
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 baking pan.
  2. Make the streusel topping by mixing flour and brown sugar, then adding peanut butter and melted butter until crumbly.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. In a stand mixer, beat creamy peanut butter and butter until smooth, then add brown sugar, egg, and vanilla.
  4. Alternate adding the dry ingredients and buttermilk to the peanut butter mixture until just combined.
  5. Spread the batter in the pan, spoon jelly over it, swirl gently, and sprinkle the streusel on top.
  6. Bake for 30 minutes until golden brown and a toothpick comes out clean. Cool on a wire rack before slicing.
