Grilled Chicken Thighs

Ingredients

Chicken Marinade

  • 2 stalks lemongrass
  • 1 piece serrano chile
  • 3 cloves garlic
  • 1 inch ginger
  • 1 Tbsp dark brown sugar
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp fish sauce
  • 1 Tbsp soy sauce

Chicken and Assembly

  • lb skinless, boneless chicken thighs
  • to taste Kosher salt
  • as needed Vegetable oil (for grill)
  • 2 scallions thinly sliced
  • ½ cup cilantro leaves with tender stems
  • to serve Sesame seeds
  • to serve lime wedges

Instructions

  1. Grate lemongrass, serrano chile, garlic, and ginger into a bowl, then mix in brown sugar, olive oil, fish sauce, and soy sauce.
  2. Season chicken thighs with salt and coat with the marinade; let marinate for at least 10 minutes and up to 2 hours.
  3. Prepare the grill for high indirect heat and oil the grill grate; grill chicken until browned, about 5 minutes per side.
  4. Let chicken rest for 10 minutes, then slice and serve topped with scallions, cilantro, sesame seeds, and lime wedges.
