Instructions
- Grate lemongrass, serrano chile, garlic, and ginger into a bowl, then mix in brown sugar, olive oil, fish sauce, and soy sauce.
- Season chicken thighs with salt and coat with the marinade; let marinate for at least 10 minutes and up to 2 hours.
- Prepare the grill for high indirect heat and oil the grill grate; grill chicken until browned, about 5 minutes per side.
- Let chicken rest for 10 minutes, then slice and serve topped with scallions, cilantro, sesame seeds, and lime wedges.
