Super Green Winter Soup

Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Sauté the onion for 3-5 minutes until softened.
- Add garlic, sweet potato, and broccoli, and sauté for another 5 minutes.
- Stir in ground cumin and smoked paprika.
- Add baby spinach and stir until wilted.
- Pour in 4 cups of vegetable broth and add edamame, bringing to a boil.
- Reduce heat and simmer until vegetables are tender.
- Use an immersion blender to purée the soup until smooth.
- Return to heat and add lemon juice to taste, adjusting thickness with remaining broth if desired.
- Serve hot, garnished with edamame beans.
