Super Green Winter Soup

Ingredients

  • 2 Tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium sweet potato, peeled and diced
  • 3 cloves garlic, minced
  • 1 bunch broccoli, about 2 cups chopped
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 7 ounces baby spinach leaves
  • 1 cup frozen shelled edamame
  • 4-6 cups vegetable broth
  • juice of 1 lemon

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Sauté the onion for 3-5 minutes until softened.
  3. Add garlic, sweet potato, and broccoli, and sauté for another 5 minutes.
  4. Stir in ground cumin and smoked paprika.
  5. Add baby spinach and stir until wilted.
  6. Pour in 4 cups of vegetable broth and add edamame, bringing to a boil.
  7. Reduce heat and simmer until vegetables are tender.
  8. Use an immersion blender to purée the soup until smooth.
  9. Return to heat and add lemon juice to taste, adjusting thickness with remaining broth if desired.
  10. Serve hot, garnished with edamame beans.
