Ingredients

The base

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 4 cups celery, chopped
  • 1 whole broccoli, florets only
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp dried basil
  • 1 tsp dried savory
  • 2 tsp organic no salt seasoning

The protein

  • 225 g tofu, diced

The liquid

  • 4 cups water
  • 1 cup soy milk (or other milk)

The greens

  • 1 cup frozen green peas
  • 100 g fresh baby spinach

The thickener and garnish

  • 1 tbsp cornstarch
  • 150 g extra sharp cheddar cheese, grated
  • to taste chopped flat parsley

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add onion, celery, and broccoli along with seasonings and cook until fragrant and veggies start to color.
  3. Add tofu and water, bring to a boil, then simmer until broccoli is tender but still bright green.
  4. Remove from heat, add green peas and spinach, then puree until smooth.
  5. Mix cornstarch into milk and add to soup, stir, and bring to a quick boil.
  6. Add cheese and stir until melted.
  7. Serve immediately, garnished with parsley, grated cheese, and a few green peas.
