Ingredients

The soup

  • 1 cup cooked split green peas
  • 2 ounces spinach, de-stemmed
  • 1 large celery stalk
  • 1 ounce parsley leaves
  • 1 ounce cilantro leaves
  • 1 clove garlic
  • 1 tablespoon miso
  • 1 tablespoon nutritional yeast
  • 2 tablespoons coconut cream
  • 2 ½ cups water

Toppings

  • to taste shaved watermelon radish
  • to taste toasted almonds
  • to taste celery leaves
  • to taste cilantro leaves

Instructions

  1. Combine the split peas, spinach, celery, parsley, cilantro, garlic, miso, nutritional yeast, 1 tablespoon of coconut cream, and water in a blender and puree until silky smooth.
  2. Transfer the mixture to a medium saucepan and heat gently until hot but not simmering.
  3. Taste and adjust with salt or more miso if needed.
  4. Serve topped with a drizzle of the remaining coconut cream and any toppings you have on hand.
