Microwave-Steamed Fish

The fish

skin-on white fish fillet (such as sablefish, sea bass, or red snapper)

Diamond Crystal or 1¾ tsp. Morton kosher salt

sugar

inch
piece ginger, peeled, cut into thin matchsticks

light or regular soy sauce

tsp.
fish sauce

scallion
cut into 2" pieces, thinly sliced lengthwise

vegetable oil
For serving

Steamed jasmine rice
for serving
Instructions
- Sprinkle the fish fillet with salt and sugar, let sit for 15 minutes, then rinse and pat dry.
- Place wooden chopsticks across a microwave-safe plate, position the fish skin side down on top, and cover with ginger. Wrap tightly with plastic wrap and microwave for about 5 minutes.
- In a small bowl, mix soy sauce, fish sauce, remaining sugar, and water until dissolved.
- Transfer the fish to a platter, top with scallion, and drizzle the soy sauce mixture over it.
- Heat vegetable oil in a skillet until smoking, then pour over the fish.
- Serve the fish with steamed jasmine rice.
