Ingredients

The salmon and veggies

  • 4 fillets salmon, fresh or frozen, thawed
  • 1 lb fresh green beans
  • 2 cups carrots, cut into 2-inch pieces
  • 1 Tbsp olive oil
  • to taste salt
  • to taste pepper

The ginger soy glaze

  • ΒΌ cup reduced-sodium soy sauce
  • 2 Tbsp sweet chili sauce
  • 1 Tbsp honey
  • 1 Tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 Tbsp chopped green onions

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Arrange the salmon, green beans, and carrots on a prepared baking sheet.
  3. Drizzle the vegetables with olive oil and season with salt and pepper.
  4. In a small bowl, whisk together the soy sauce, sweet chili sauce, honey, ginger, garlic, and green onions.
  5. Spoon the sauce over the salmon fillets.
  6. Bake for 10 minutes, then switch to broil for an additional 3 to 5 minutes until the salmon is flaky and cooked through.
