Nut Free Paleo Carrot Cake

Ingredients

  • ½ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 6 large eggs
  • ½ cup coconut oil, melted
  • cup honey
  • cups carrots, grated
  • ½ cup currants

Instructions

  1. Combine coconut flour, salt, baking soda, and cinnamon in a food processor.
  2. Pulse in eggs, coconut oil, and honey.
  3. Remove the blade and stir in grated carrots and currants by hand.
  4. Grease a 7-inch springform pan with coconut oil and dust with coconut flour.
  5. Transfer the batter into the prepared pan.
  6. Bake at 350°F for 45-60 minutes.
  7. Cool for 1 hour before serving.
