Paleo Carrot Cake Banana Bread

Ingredients

The bread

  • 3 pieces eggs
  • 2 pieces super ripe bananas
  • 2 ¼ cups almond flour
  • ¼ cup coconut sugar
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 pinch salt
  • ¼ cup raisins
  • ¾ cup grated carrots (about 3)
  • 2 tbsp Primal Palate apple pie spice (or 1 tbsp cinnamon, ¼ tsp nutmeg)
  • ¼ cup coconut oil, melted

The frosting

  • ¾ container Simple Mills vanilla frosting

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Line a loaf pan with parchment paper and set aside.
  3. 3. In a medium bowl, mash the bananas well.
  4. 4. Add the eggs and melted coconut oil to the mashed bananas and whisk until well combined.
  5. 5. In a large bowl, mix together the almond flour, coconut sugar, baking soda, baking powder, apple pie spice (or cinnamon/nutmeg), and salt.
  6. 6. Pour the wet ingredients into the bowl with the dry ingredients and mix.
  7. 7. Fold in the grated carrots and raisins.
  8. 8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. 9. Bake for 40-45 minutes or until a toothpick comes out clean.
  10. 10. Remove from the oven and let cool completely before frosting.
  11. 11. Slice and enjoy!
