Instructions
- Preheat the oven to 350°F and prepare a loaf pan with parchment paper or grease it with coconut oil.
- In a small bowl, mix the dry ingredients including flours, cinnamon, baking soda, salt, walnuts, and raisins.
- In a food processor, combine all wet ingredients and blend until smooth.
- Combine the wet and dry mixtures using a rubber spatula until well mixed.
- Pour the batter into the prepared loaf pan and sprinkle with coconut and pistachios.
- Bake for 70-75 minutes until the center is set; a toothpick should come out clean.
- Let the loaf cool in the pan for about 5 minutes before transferring it to a wire rack to cool completely.
