Instructions
- Preheat the oven to 350°F and prepare a loaf pan with parchment paper or coconut oil.
- In a large bowl, mash the bananas.
- Whisk in the eggs, then stir in the almond butter, maple syrup, and vanilla until combined.
- In a separate bowl, mix together the coconut flour, cinnamon, baking soda, baking powder, and salt.
- Combine the dry ingredients with the wet ingredients until fully mixed.
- Pour the batter into the prepared loaf pan and bake for 45-50 minutes, covering with foil halfway through to prevent over-browning.
- Check for doneness with a toothpick; it should come out clean when the bread is ready.
