Ingredients

The batter

  • 2 large overripe bananas
  • 3 large eggs
  • ½ cup almond butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla

The dry ingredients

  • ½ cup coconut flour
  • 1 tbsp coconut flour
  • ½ tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • tsp salt

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with parchment paper or coconut oil.
  2. In a large bowl, mash the bananas.
  3. Whisk in the eggs, then stir in the almond butter, maple syrup, and vanilla until combined.
  4. In a separate bowl, mix together the coconut flour, cinnamon, baking soda, baking powder, and salt.
  5. Combine the dry ingredients with the wet ingredients until fully mixed.
  6. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, covering with foil halfway through to prevent over-browning.
  7. Check for doneness with a toothpick; it should come out clean when the bread is ready.
