Ingredients

The bread

  • 3 pieces really ripe bananas, mashed
  • ½ cup coconut sugar
  • 2 tsp vanilla
  • 2 cups almond flour
  • ½ cup tapioca starch (or arrowroot starch)
  • ½ tsp sea salt
  • 1 tsp baking soda
  • 1 tbsp apple cider vinegar

Optional toppings

  • 1 piece banana, sliced lengthwise into long thin slices
  • to taste chopped nuts (e.g., walnuts or pecans)
  • to taste chocolate chips
  • to taste nut butter (for drizzling on top after baking)

Instructions

  1. Preheat the oven to 350°F and line a standard bread loaf pan with parchment paper.
  2. In a large mixing bowl, mash the bananas and then add coconut sugar and vanilla, mixing well.
  3. Stir in almond flour, tapioca starch, and sea salt until combined.
  4. Add baking soda and apple cider vinegar, let them react, then mix everything together.
  5. Spoon the batter into the lined loaf pan, spreading it evenly.
  6. Add any optional toppings and gently press them into the batter.
  7. Bake for 60-65 minutes or until the top is brown, cracked, and the loaf feels firm.
  8. Once baked, lift the loaf out using the parchment paper and let it cool before slicing.
