Paleo Banana Bread

Ingredients

Wet Ingredients

  • 4 pieces mashed bananas
  • 8 pieces eggs
  • ½ cup coconut sugar
  • ½ cup melted coconut oil or ghee

Dry Ingredients

  • 1 teaspoon sea salt
  • 2 teaspoons cinnamon
  • ½ cup arrowroot or tapioca flour
  • 1 cup coconut flour, sifted
  • 1 teaspoon baking soda
  • 1 cup chopped 80% dark chocolate or chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line the bread loaf pans with parchment paper.
  3. Whisk together the dry ingredients in a bowl.
  4. In a separate bowl, mix the wet ingredients using an electric mixer.
  5. Combine the dry ingredients with the wet ingredients and mix well.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for about 50 minutes or until a knife inserted comes out mostly clean.
  8. Allow the bread to cool before slicing and serving.
