Instructions
- Sauté the vegetables in butter until partially cooked.
- Add flour to the vegetables to create a roux and cook for 5 minutes.
- Stir in stock to make gravy and season with salt and pepper; cook on low for 15 minutes.
- Cool the mixture and fill the pie crust, crimp the edges, and brush with egg.
- Bake in a preheated oven until golden brown.
- For croquettes, mix stuffing with turkey and enough gravy to form patties.
- Dust croquettes with flour and sauté in olive oil until browned, then bake in the oven.
