Ingredients

The sweet potato topping

  • 1 pound sweet potatoes, peeled and diced
  • ¼ cup sour cream or full-fat plain yogurt

The filling

  • cups chopped cooked turkey breast
  • ½ tablespoon olive oil
  • 1 large shallot, chopped
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh sage
  • 2 stalks celery, chopped
  • 4 ounces frozen peas and carrots
  • 2⅔ cups turkey or chicken broth
  • ¼ teaspoon kosher salt
  • to taste black pepper
  • 2 tablespoons cornstarch

Instructions

  1. Boil peeled and diced sweet potatoes in salted water until tender, then mash with sour cream and salt.
  2. Preheat the oven to 375°F.
  3. Sauté shallots, parsley, thyme, and sage in olive oil until soft.
  4. Add celery and cook until soft, then mix in frozen vegetables, turkey, broth, salt, and pepper. Bring to a boil and simmer for 8-10 minutes.
  5. Mix cornstarch with some broth, then add to the turkey mixture and cook until thickened.
  6. Transfer the turkey mixture to a baking dish or ramekins, top with mashed sweet potatoes, and bake for 20 minutes. Broil for 2-3 minutes for browning.
