Turkey Pot Pie with Sweet Potato Topping

Instructions
- Boil peeled and diced sweet potatoes in salted water until tender, then mash with sour cream and salt.
- Preheat the oven to 375°F.
- Sauté shallots, parsley, thyme, and sage in olive oil until soft.
- Add celery and cook until soft, then mix in frozen vegetables, turkey, broth, salt, and pepper. Bring to a boil and simmer for 8-10 minutes.
- Mix cornstarch with some broth, then add to the turkey mixture and cook until thickened.
- Transfer the turkey mixture to a baking dish or ramekins, top with mashed sweet potatoes, and bake for 20 minutes. Broil for 2-3 minutes for browning.
