Lebanese Lamb Rice

Instructions
- Melt ghee in a large sauté pan over medium-high heat and cook the ground lamb seasoned with salt and pepper until browned and crispy, about 8 to 10 minutes.
- Add uncooked rice to the pan and stir until coated and starting to turn translucent.
- Pour in the stock, bring to a simmer, then cover and cook on low heat until the liquid is absorbed and the rice is cooked, about 15 to 20 minutes.
- Remove from heat and let the rice rest for 5 minutes, then stir in chopped pistachios and fresh mint.
- Spread yogurt on serving plates and spoon the rice over it.
- Garnish with more mint and serve with cucumber slices.
