Lebanese Lamb Rice

Ingredients

The main ingredients

  • 1 tbsp ghee
  • 1 lb ground lamb
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • 1 cup dry basmati or jasmine rice
  • 2 cups bone or chicken broth
  • ¼ cup raw shelled pistachios
  • 1 tbsp finely chopped fresh mint leaves

To serve

  • 1 cup plain Greek yogurt
  • to taste fresh cucumber slices

Instructions

  1. Melt ghee in a large sauté pan over medium-high heat and cook the ground lamb seasoned with salt and pepper until browned and crispy, about 8 to 10 minutes.
  2. Add uncooked rice to the pan and stir until coated and starting to turn translucent.
  3. Pour in the stock, bring to a simmer, then cover and cook on low heat until the liquid is absorbed and the rice is cooked, about 15 to 20 minutes.
  4. Remove from heat and let the rice rest for 5 minutes, then stir in chopped pistachios and fresh mint.
  5. Spread yogurt on serving plates and spoon the rice over it.
  6. Garnish with more mint and serve with cucumber slices.
