Ingredients

The Sauce

  • cup coconut aminos
  • 2 tablespoons tomato paste
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • ¼ teaspoon black pepper

The Pork Filling

  • 1 lb. ground pork
  • 2 cups diced mushrooms
  • ½ medium onion, diced
  • 1 8-ounce can water chestnuts, diced

For Serving and Topping

  • as needed lettuce leaves (butter lettuce, bib or green lettuce)
  • as needed shredded cabbage and carrot mix
  • as needed green onion, sliced
  • as needed cilantro, chopped
  • as needed roasted cashews, chopped
  • as needed sesame seeds
  • as needed crushed red pepper
  • as needed lime wedge

Instructions

  1. Combine the sauce ingredients in a small jar or bowl and whisk well.
  2. In a large pan over medium-high heat, cook the ground pork, mushrooms, onion, and season with salt and pepper for about 4-5 minutes.
  3. Add the diced water chestnuts and continue to cook until the pork is fully cooked.
  4. Reduce the heat to medium-low, add the sauce and 2 tablespoons of water, and bring to a low simmer for 5-7 minutes.
  5. Serve the pork mixture in lettuce leaves and add desired toppings.
