Instructions
- Whisk together the coconut aminos, sesame oil, rice wine vinegar, almond butter, ginger, and hot sauce in a small bowl and set aside.
- Heat olive oil in a large skillet over medium heat and add diced onion, cooking for 3 minutes until softened.
- Add minced mushrooms and cook for another 3 minutes until the onion is translucent.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add ground pork and cook until browned, crumbling with a spatula.
- Mix in shredded carrots and cook for about 3 minutes until they begin to soften.
- Pour the coconut amino mixture into the skillet and stir to combine, then add diced water chestnuts and green onions.
- Cook for an additional 3-4 minutes, then season with salt and black pepper to taste.
- In a small bowl, whisk together the sauce ingredients until well combined.
- Assemble the lettuce wraps by spooning the filling into the center of lettuce leaves and serve with the sauce and optional garnishes.
