Ingredients

The filling

  • ¼ cup coconut aminos
  • 2 teaspoons sesame oil
  • 1 teaspoon rice wine vinegar
  • 1 tablespoon almond butter
  • 2 teaspoons freshly grated ginger
  • 1 tablespoon Whole30-compliant hot sauce
  • 1 tablespoon olive oil
  • ½ one yellow onion, diced
  • 1 cup baby bella mushrooms, minced
  • 3 cloves garlic, minced
  • 1 pound ground pork or ground chicken
  • ½ cup shredded carrots
  • to taste salt
  • to taste freshly ground black pepper
  • 1 8-ounce can water chestnuts, diced
  • 3 green onions, thinly sliced 1 tablespoon reserved
  • 1 head bibb lettuce leaves

The sauce

  • ¼ cup coconut aminos
  • 1 ½ teaspoons sesame oil
  • 1 teaspoon rice wine vinegar
  • to taste Whole30-compliant hot sauce
  • 1 tablespoon green onions, reserved from above ingredients
  • to taste salt

Optional garnishes

  • sesame seeds
  • thinly sliced green onions

Instructions

  1. Whisk together the coconut aminos, sesame oil, rice wine vinegar, almond butter, ginger, and hot sauce in a small bowl and set aside.
  2. Heat olive oil in a large skillet over medium heat and add diced onion, cooking for 3 minutes until softened.
  3. Add minced mushrooms and cook for another 3 minutes until the onion is translucent.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add ground pork and cook until browned, crumbling with a spatula.
  6. Mix in shredded carrots and cook for about 3 minutes until they begin to soften.
  7. Pour the coconut amino mixture into the skillet and stir to combine, then add diced water chestnuts and green onions.
  8. Cook for an additional 3-4 minutes, then season with salt and black pepper to taste.
  9. In a small bowl, whisk together the sauce ingredients until well combined.
  10. Assemble the lettuce wraps by spooning the filling into the center of lettuce leaves and serve with the sauce and optional garnishes.
