Ingredients

The salsa

  • 3 Mandarin oranges, peeled and diced (or 2 small oranges)
  • 2 peaches, peeled, pitted and diced
  • 2 tablespoons diced red bell pepper
  • 2 tablespoons diced red onion
  • tablespoons fresh lime juice
  • 1 tablespoon chopped fresh chives
  • to taste salt
  • to taste pepper

The crostini

  • 4 ounces goat cheese, at room temperature
  • 2 tablespoons milk
  • 1 gluten free French baguette, sliced

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a medium bowl, combine the oranges, peaches, red pepper, red onion, lime juice, and chives.
  3. In a small bowl, whisk together the goat cheese and milk.
  4. Arrange the bread slices in a single layer and cook for 10 minutes.
  5. Remove from the oven and spread goat cheese on each bread slice.
  6. Return to the oven and bake for another 5 minutes.
  7. Using a slotted spoon, top the rounds with salsa and serve immediately.
