Goat Cheese Crostini with Orange Peach Salsa

Mandarin oranges, peeled and diced (or 2 small oranges)

The crostini

goat cheese, at room temperature

milk

gluten free French baguette, sliced
Instructions
- Preheat the oven to 400 degrees.
- In a medium bowl, combine the oranges, peaches, red pepper, red onion, lime juice, and chives.
- In a small bowl, whisk together the goat cheese and milk.
- Arrange the bread slices in a single layer and cook for 10 minutes.
- Remove from the oven and spread goat cheese on each bread slice.
- Return to the oven and bake for another 5 minutes.
- Using a slotted spoon, top the rounds with salsa and serve immediately.
