Easy Broccoli Cheese Tortellini

Ingredients

The pasta and vegetables

  • 8 ounces cheese tortellini
  • 2 heads broccoli, florets roughly chopped
  • 2 lemons preferably Meyer, thinly sliced
  • 2 tablespoons olive oil
  • 2 large handfuls baby spinach
  • 1 tablespoon chopped fresh chives

The sauce and seasoning

  • 4 tablespoons butter
  • 1 cup grated manchego cheese
  • 1 cup grated parmesan cheese
  • pinch crushed red pepper flakes
  • kosher salt and pepper

Instructions

  1. 1. Boil salted water in a large pot.
  2. 2. Add tortellini and broccoli, cooking until tortellini is al dente (about 4-6 minutes).
  3. 3. In the last minute of cooking, add the lemon slices.
  4. 4. Reserve 1 cup of pasta cooking water before draining.
  5. 5. Drain the pasta and remove the lemon slices.
  6. 6. In the same pot, heat olive oil and fry lemon slices until golden (about 30 seconds to 1 minute).
  7. 7. Add tortellini, broccoli, spinach, chives, butter, cheese, and a splash of reserved pasta water.
  8. 8. Toss until cheese melts, adding more water to create a loose sauce.
  9. 9. Season with crushed red pepper, salt, and pepper before serving.
