Easy Broccoli Cheese Tortellini

The pasta and vegetables

cheese tortellini

broccoli, florets roughly chopped

lemons
preferably Meyer, thinly sliced

olive oil

large handfuls
baby spinach

chopped fresh chives
The sauce and seasoning

tablespoons
butter

cup
grated manchego cheese

cup
grated parmesan cheese

crushed red pepper flakes

kosher salt and pepper
Instructions
- 1. Boil salted water in a large pot.
- 2. Add tortellini and broccoli, cooking until tortellini is al dente (about 4-6 minutes).
- 3. In the last minute of cooking, add the lemon slices.
- 4. Reserve 1 cup of pasta cooking water before draining.
- 5. Drain the pasta and remove the lemon slices.
- 6. In the same pot, heat olive oil and fry lemon slices until golden (about 30 seconds to 1 minute).
- 7. Add tortellini, broccoli, spinach, chives, butter, cheese, and a splash of reserved pasta water.
- 8. Toss until cheese melts, adding more water to create a loose sauce.
- 9. Season with crushed red pepper, salt, and pepper before serving.
