Sweet Potato Doughnuts

Ingredients

  • 1 Tbsp instant yeast
  • 1 large egg
  • 1 large egg yolk
  • cup brown sugar
  • 2 ¼ tsp baking powder
  • 1 ½ tsp salt
  • ¾ tsp ground nutmeg
  • 1 cup milk, lukewarm
  • sweet potato puree (from about one medium sweet potato)
  • 6 Tbsp butter, melted
  • 1 tsp vanilla
  • 5 ½ cups flour

Instructions

  1. Combine all ingredients except flour and whisk until smooth.
  2. Add flour and knead the mixture for 10 minutes.
  3. Place the dough in a greased, covered bowl and let it rise for about an hour.
  4. Roll out the dough to ½ inch thick and cut out doughnuts.
  5. Place the cut doughnuts and doughnut holes on a greased plate, cover, and let them rise in a warm place until doubled in size (about 30 minutes).
  6. Heat oil to medium heat (about 350 degrees) and fry each doughnut for a minute or two on each side until cooked.
  7. Place fried doughnuts on a plate with paper towels to drain.
  8. Dip in glaze and allow to cool on a cooling rack.
