Ingredients

The donuts

  • 7 cups all-purpose flour
  • ¾ cup granulated sugar
  • teaspoons instant yeast
  • 2 cups cold milk
  • 2 large eggs
  • teaspoons salt
  • ¾ cup salted butter
  • 2 to 3 quarts vegetable oil

The glaze

  • 6 cups powdered sugar
  • ¾ cup hot water
  • ¼ teaspoon vanilla extract
  • pinch salt

Instructions

  1. Mix flour, sugar, yeast, milk, and eggs in a stand mixer until combined.
  2. Add salt and mix until smooth, then let the dough rest for 5 minutes.
  3. Gradually add softened butter while mixing until fully incorporated.
  4. Knead the dough for 10-12 minutes until it becomes soft and stretchy.
  5. Transfer the dough to a greased container, cover, and refrigerate for 8-24 hours.
  6. Roll the chilled dough to about ¼-inch thick and cut out donuts and donut holes.
  7. Let the donuts rise until puffy, about 20 minutes in a warm oven or 1-2 hours at room temperature.
  8. Heat oil in a pot to 350°F and fry the donuts until golden brown on both sides.
  9. Transfer fried donuts to a paper towel-lined sheet to drain excess oil.
  10. Prepare the glaze by whisking together powdered sugar, hot water, vanilla, and salt until smooth.
  11. Dip the warm donuts in the glaze and let them cool on a wire rack.
