Ingredients

The dough

  • cup water
  • 5 teaspoons active yeast
  • cups milk
  • ½ cup sugar
  • teaspoons salt
  • 2-3 large egg yolks
  • 5 cups all-purpose flour
  • 1 teaspoon vanilla
  • 100 grams butter

Simple Sugar Glaze

  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 4-6 tablespoons water or milk

Chocolate Glaze

  • cups powdered or confectioner sugar
  • 4 tablespoons cocoa powder
  • 2 tablespoons water or milk
  • 2 teaspoons vanilla

Instructions

  1. Combine lukewarm water and yeast in a stand mixer and let it dissolve for about 5 minutes.
  2. Heat milk in a microwave-safe bowl for about 2 minutes and let it cool.
  3. Add milk, sugar, salt, egg yolks, butter, and 2 cups of flour to the yeast mixture and mix for 2 minutes at medium speed.
  4. Add the remaining 3 cups of flour and continue mixing, scraping down the sides as needed.
  5. Place the dough in a greased bowl, cover it, and let it rise in a warm place for 1 to 2 hours until doubled in size.
  6. Roll out the dough on a floured surface to about ¼ inch thickness and cut into doughnuts.
  7. Let the cut doughnuts stand for about 10 minutes.
  8. Preheat the oven to 375°F and bake the doughnuts for 8 to 10 minutes until golden brown.
  9. Remove from the oven and let cool for a minute or two before dipping in glaze.
