Ingredients

Homemade Teriyaki Sauce

  • cup soy sauce
  • ¼ cup water
  • 2 tablespoons mirin
  • 1 tablespoon rice wine vinegar
  • ¼ cup granulated sugar
  • 3 tablespoons brown sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger
  • ½ tablespoon cornstarch
  • 1 tablespoon water (for cornstarch mixture)

Teriyaki Chicken

  • 2 large or 4 small boneless skinless chicken thighs

Serve With

  • as needed rice
  • as needed steamed broccoli

Instructions

  1. Combine all teriyaki sauce ingredients in a saucepan and simmer until thickened.
  2. Marinate the chicken thighs in teriyaki sauce for at least 30 minutes.
  3. Preheat the oven to 400°F and prepare a baking sheet.
  4. Bake the chicken for 8 minutes, baste with sauce, then bake for an additional 3 to 5 minutes until cooked through.
  5. Let the chicken rest for 5 minutes before slicing and serve with rice and broccoli.
