Sesame Almond Brown Rice Balls

The rice

Instructions
- Rinse the rice briefly and drain. Soak for an hour if possible.
- Bring the rice and water to a boil in a thick-bottomed pot.
- Reduce heat and simmer covered until water is absorbed and rice is cooked, about an hour.
- Let the rice rest covered for at least 15 minutes, then fluff with a fork.
- Incorporate sesame seeds, almonds, and green onions into the rice.
- Cool the rice mixture before shaping into balls.
- Line a small cup with plastic wrap and fill it 2/3 full with the rice mixture.
- Optionally tuck a piece of avocado or tofu in the center.
- Gather the plastic wrap and twist to shape into a ball, then remove the wrap.
- Place the rice balls in a parchment-lined container.
