Sesame Almond Brown Rice Balls

Ingredients

The rice

  • 2 cups brown sushi rice
  • 3 cups water
  • ½ teaspoon fine grain sea salt

The mix-ins

  • ¼ cup sesame seeds
  • 3 tablespoons toasted almond slices, chopped
  • ¼ cup minced green onions
  • optional avocado cubes (tossed in lemon juice)
  • optional tofu

Instructions

  1. Rinse the rice briefly and drain. Soak for an hour if possible.
  2. Bring the rice and water to a boil in a thick-bottomed pot.
  3. Reduce heat and simmer covered until water is absorbed and rice is cooked, about an hour.
  4. Let the rice rest covered for at least 15 minutes, then fluff with a fork.
  5. Incorporate sesame seeds, almonds, and green onions into the rice.
  6. Cool the rice mixture before shaping into balls.
  7. Line a small cup with plastic wrap and fill it 2/3 full with the rice mixture.
  8. Optionally tuck a piece of avocado or tofu in the center.
  9. Gather the plastic wrap and twist to shape into a ball, then remove the wrap.
  10. Place the rice balls in a parchment-lined container.
