Pizza Stuffed Shells

Ingredients

The filling

  • 24 pieces jumbo pasta shells
  • 5 ounces mini pepperoni
  • 16 ounces ricotta cheese
  • 12 ounces shredded mozzarella cheese
  • 2 teaspoons Italian seasoning
  • to taste salt
  • to taste pepper
  • ½ cup grated parmesan cheese

The sauce

  • 3 cups pizza sauce or marinara sauce

For baking

  • 2 tablespoons parsley, chopped
  • as needed cooking spray

Instructions

  1. Preheat the oven to 375°F and coat a baking pan with cooking spray.
  2. Spread pizza sauce evenly in the bottom of the pan.
  3. In a large bowl, combine half the pepperoni, ricotta cheese, half the mozzarella, Italian seasoning, salt, pepper, and parmesan cheese.
  4. Fill each pasta shell with the ricotta mixture and place them in the baking dish.
  5. Sprinkle the remaining mozzarella and pepperoni over the shells.
  6. Bake for 25 minutes until the cheese is melted and starting to brown.
  7. Sprinkle with parsley and serve.
