Chicken Parmesan Stuffed Shells

Ingredients

The shells and sauce

  • 18 pieces jumbo pasta shells
  • 2 ¼ cups pasta sauce

The filling

  • 1 cup fat free Ricotta cheese
  • 2 oz finely shredded Parmesan cheese
  • 3 oz shredded 2% Mozzarella cheese
  • 1 teaspoon Italian seasoning
  • to taste salt
  • 10 oz chopped cooked boneless skinless chicken breast
  • 1.5 oz croutons

Instructions

  1. Cook the pasta shells according to package instructions, then drain and rinse them.
  2. Preheat the oven to 350°F.
  3. Spread ½ cup of pasta sauce in the bottom of a casserole dish.
  4. In a mixing bowl, combine ricotta, 1 oz of Parmesan, 1 oz of Mozzarella, Italian seasoning, and salt.
  5. Add chopped chicken and ½ cup of pasta sauce to the cheese mixture and mix well.
  6. Stuff the cooled pasta shells with the chicken and cheese filling.
  7. Arrange the stuffed shells in the casserole dish with the open side facing up.
  8. Pour the remaining pasta sauce over the shells and sprinkle with the remaining cheeses and croutons.
  9. Bake in the preheated oven for 30 minutes.
