Five Herb Pesto

Ingredients

  • teaspoons whole coriander seeds
  • ¼ teaspoon fine grain sea salt
  • 1 large clove garlic
  • a handful sliced almonds, toasted
  • zest of one lemon
  • 50 medium basil leaves
  • a handful arugula leaves
  • ½ teaspoon fresh oregano leaves
  • ¼ cup minced chives
  • ¾ cup grated Pecorino cheese
  • ¼ cup extra virgin olive oil

Instructions

  1. Toast the coriander seeds in a dry skillet until fragrant and grind finely.
  2. Add the salt and garlic to the ground coriander and crush into a paste.
  3. Incorporate the toasted almonds and lemon zest, smashing them into a nut butter.
  4. Gradually add the basil leaves, followed by the arugula and oregano, blending until consistent.
  5. Stir in the chives and grated cheese, then gradually mix in the olive oil.
  6. Taste and adjust the seasoning as needed.
