Instructions
- Toast the coriander seeds in a dry skillet until fragrant and grind finely.
- Add the salt and garlic to the ground coriander and crush into a paste.
- Incorporate the toasted almonds and lemon zest, smashing them into a nut butter.
- Gradually add the basil leaves, followed by the arugula and oregano, blending until consistent.
- Stir in the chives and grated cheese, then gradually mix in the olive oil.
- Taste and adjust the seasoning as needed.
