Fresh Basil Pesto

Ingredients

  • 2–4 medium garlic cloves
  • cup hemp seeds
  • ½ cup olive oil
  • ½ cup grated pecorino or parmesan cheese
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 4 cups fresh basil leaves

Instructions

  1. In a food processor, pulse garlic, hemp seeds, and olive oil until the garlic is ground up.
  2. Add lemon juice, grated cheese, salt, and pepper, and pulse to combine.
  3. Add half of the basil leaves, pulse a few times, then add the remaining basil and process until blended but still textured.
  4. Taste and adjust salt if necessary.
