Ingredients

  • 2 cups fresh basil leaves
  • β…“ cup pine nuts
  • β…“ cup freshly grated or shredded parmesan cheese
  • 3 small cloves garlic
  • β…“ cup olive oil
  • 1 teaspoon fresh lemon juice
  • ΒΌ teaspoon salt
  • to taste freshly ground black pepper

Instructions

  1. Blend the basil, pine nuts, parmesan cheese, and garlic in a food processor or blender.
  2. Scrape down the sides and add olive oil, lemon juice, and salt.
  3. Pulse until the mixture is blended and relatively smooth.
  4. Adjust the consistency with more olive oil if desired.
  5. Taste and add pepper or more salt as needed.
  6. Store the pesto in a jar or container and refrigerate.
