Homemade Pesto
Ingredients

basil, leaves only, washed and dried

medium cloves
garlic

small handful
raw pine nuts

Parmesan, loosely packed and freshly grated

tablespoons
extra-virgin olive oil
Instructions
- Chop the garlic along with about ⅓ of the basil leaves until finely minced.
- Add more basil and chop, then add the rest of the basil and chop again.
- Incorporate half of the pine nuts and chop, then add the remaining pine nuts and chop.
- Add half of the Parmesan and chop, followed by the rest of the Parmesan and chop until fine.
- Transfer the mixture into a small bowl and form it into a 'cake'.
- Cover the pesto 'cake' with a few tablespoons of olive oil.
- Stir the pesto before serving and adjust with pasta water if needed.
