Homemade Pesto

Ingredients

  • 1 large bunch basil, leaves only, washed and dried
  • 3 medium cloves garlic
  • 1 small handful raw pine nuts
  • ¾ cup Parmesan, loosely packed and freshly grated
  • a few tablespoons extra-virgin olive oil

Instructions

  1. Chop the garlic along with about ⅓ of the basil leaves until finely minced.
  2. Add more basil and chop, then add the rest of the basil and chop again.
  3. Incorporate half of the pine nuts and chop, then add the remaining pine nuts and chop.
  4. Add half of the Parmesan and chop, followed by the rest of the Parmesan and chop until fine.
  5. Transfer the mixture into a small bowl and form it into a 'cake'.
  6. Cover the pesto 'cake' with a few tablespoons of olive oil.
  7. Stir the pesto before serving and adjust with pasta water if needed.
