Homemade Pesto (Without Pine Nuts)

Ingredients

  • 2 cups basil leaves
  • cup raw pecans
  • ¼ cup Parmesan
  • 1 clove garlic
  • 3 tablespoons lemon juice
  • ¼ teaspoon kosher salt
  • cup extra virgin olive oil

Instructions

  1. Blanch the basil in boiling water for 10 seconds, then transfer to ice water.
  2. In a blender, pulse together the pecans, Parmesan, and garlic until mostly broken down.
  3. Add the basil, lemon juice, and salt to the blender.
  4. With the blender on medium speed, slowly drizzle in the olive oil.
  5. Scrape down the sides of the blender as needed and taste for seasoning.
