Holiday Crunch Salad

Ingredients

  • 1 ½ cups uncooked quinoa
  • 1 cup pomegranate seeds
  • 4 pieces chopped scallions
  • 1 cup chopped Italian parsley
  • ½ cup toasted sliced almonds
  • 1 ½ orange (zest and juice)
  • cup olive oil
  • 1 tablespoon red wine vinegar
  • ½ teaspoon salt
  • ¼ teaspoon cracked pepper
  • ¼ teaspoon cinnamon
  • ¼ teaspoon allspice
  • 1–2 pieces chopped avocados (optional)

Instructions

  1. Rinse the quinoa and cook it with water and a pinch of salt, then let it cool.
  2. In a bowl, combine the cooled quinoa, pomegranate seeds, scallions, parsley, and almonds.
  3. Add olive oil, orange juice and zest, vinegar, salt, and spices, then toss well.
  4. Taste and adjust the salt, and gently fold in the avocado just before serving.
