Holiday Crunch Salad

Instructions
- Rinse the quinoa and cook it with water and a pinch of salt, then let it cool.
- In a bowl, combine the cooled quinoa, pomegranate seeds, scallions, parsley, and almonds.
- Add olive oil, orange juice and zest, vinegar, salt, and spices, then toss well.
- Taste and adjust the salt, and gently fold in the avocado just before serving.
