Red & Green Christmas Salad

finely chopped fresh parsley

pomegranate seeds

Herbamare

juice of 2
limes

olive oil

avocado oil
Instructions
- Rinse the quinoa in a colander and add it to a pot with water.
- Cook the quinoa until done, about 20 minutes.
- Transfer the quinoa to a large mixing bowl to cool, optionally placing it in the freezer to speed up the process.
- Once cool, add the remaining ingredients and stir to combine.
- Optional: garnish with parsley and pomegranates before serving.
