Ingredients

The Salad

  • 12 oz snow peas, julienned
  • 1 bulb fennel, shaved paper thin
  • 1 small kohlrabi, julienned
  • 4 mini sweet red peppers, julienned
  • 1 cup small cauliflower florets
  • 1 large red apple, skin on, finely diced
  • ½ cup raisins
  • ½ cup raw pecans, toasted
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh sage, chopped

The Dressing

  • ½ cup avocado oil
  • ¼ cup white balsamic vinegar
  • ¼ cup unsweetened applesauce
  • 2 cloves garlic, smashed
  • tsp Himalayan salt
  • 1 tsp ground black pepper
  • ½ tsp ground Ceylon cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp grated nutmeg

Instructions

  1. Prep all the veggies except the apple, which should be chopped last to prevent browning.
  2. Combine all dressing ingredients in a jar and blend until smooth and creamy.
  3. Mix the dressing with the prepared veggies, including the apple, until well combined.
  4. Serve immediately or refrigerate for a few hours to meld flavors.
